I would like to thank Bill and Chip for a most amazing and delicious seven course meal at Bistro de Paris. Patrice and his staff did an amazing job and the food, company, and wine were spectacular. I doubt I will ever have a meal like this on Bonaire again!

Mise en bouche
Flan Truffe au caviar
Flan Truffe au caviar

Course Two
Pithiviers au Foie gras et Fondue de Poireaux, sauce griotte
Puff pastry filled with foie gras and leak compote with wild cherry sauce
Pithiviers au Foie gras et Fondue de Poireaux, sauce griotte

Course Three
Amoniere d'escargot et son beurre persille
Purse of snail with Provencal butter
Amoniere d'escargot et son beurre persille

Some Champagne to cleanse the pallet
champagne

Course Four
Crepe Souffle au crabe et langouste Coulis de la mer
Crepe Souffle with crab and lobster sea food glaze
Crepe Souffle au crabe et langouste Coulis de la mer

Course Five
Don't know what it was but it was good!
pallet cleansing

Course Six
Duo d'Agneau a la fleur de thym
Duo of lamb chop and shank served with thyme flower
Duo d'Agneau a la fleur de thym

You can't see it very good on the desert, but the Chocolate on the top spells "bt":-)

I just got home and am starving....those pictures are killing me. Everything looks absolutely delicious.

Bistro de Paris is a fantastic restaurant and Patrice really makes it so!

Think your "I don't know pic" is a sorbet. Lemon or grapefruit or ??? Also, to cleanse the pallet before the next course. So, do I get the winning answer for the same awesome meal during our Feb/March 2010? Wow! You have some very nice friends!!! peace. mellen

Mellen, whatever it was it had alcohol in it...LOL, it was delish! And yes, Chip and Bill were VERY generous. I'll post the day of diving on the chartered Toucan boat tomorrow.

Chip and Bill are two most incredibly down to earth, genuine, deep, soulful, loving, caring, generous and wonderful friends. I'm proud to call them my friends.

Liz, it was a meal that I have no doubt I will never have another like it. I have no idea how Patrice pulled it off... but he did...he got a grand round of applause at the end of the meal:-) However, I think that Bob is probably banned for life at Bistro...LOL!

Bob and Bistro de Paris wrong on so many levels it's scarey, banned is a good and appropriate thing.

Chip and Bill how can us mere mortals get into your good graces? I hope it does not involve floatation devices.

Sue, I had help from a little friend. I was STUFFED and couldn't finish each full course (except the caviar and sorbet) LOL!

Sue, yes. I ate everything, and finished whatever Tinkster did not eat. I did not want Patrice to think she didn't like it. Laugh, go ahead. I'm serious as a heart attack. It was one of the most, if not the most, incredible culinary experiences I have had in my young life. LOL

I think my favs were the caviar, snails, faux gras, sorbet, crepe, lamb, wild boar, and desert.

Link kept saying "you gonna finish that Cyn?" LOL!

The mystery intermezzo was Apple Brandy, with lemon sorbet. I drank all of that too.
